Wash, clean and remove eyes and blemishes from the potato or potatoes you desire to bake.

Potatoes may be baked  in the microwave oven as a time saving measure, but they can also be baked in a conventional oven at 350 degrees F.

Before baking, punch a few holes with a knife in each potato, making sure that the knife penetrates at least half way through the potato.  This allows the steam to escape. Bake the potatoes until tender.

Serve the potatoes hot, split lengthwise and crosswise about 3/4 of the way through, and then with both hands, squeeze the four corner of the potato quickly (to avoid burning your finger tips), so that the top splays out.  Fill the open part of the potato with Primo and Mary’s Black Bean and Corn Salsa.  Cheese and scallion are optional.

Trim and then butterfly the chicken breast by slicing it horizontally almost but not entirely in half so you can open it like a book.

Clean and oil the grill grate. Grill the breast until the edges of the top side are white, about 3 minutes. Flip and cook until just done, 1 to 2 minutes more. Let the chicken rest for 5 to 10 minutes.

Arrange the lettuce on a platter or four dinner plates. In the center add Primo and Mary’s Black Bean and Corn Salsa to the lettuce. Add the thinly sliced pieces of warm grilled chicken, scallions and sliced avocado.

***Optional***
In a small bowl or a glass jar with a tight lid, combine 6 Tbs. olive oil, 2 Tbs. lime juice, 1Tbs. of the cilantro, 2 tsp. honey, 1/2 tsp. salt, a few grinds of pepper, and a few shakes of green Tabasco (if using). Whisk or shake well to combine.

Add 2 Tbs. of the dressing.

Combine 1 jar of Primo and Mary’s Black Bean and Corn Salsa (mild or medium), 2-jars of water from the emptied salsa jar and 3-chicken bouillon cubes .  Add 1/4 cup of Orzo Pasta or rice.

For a heartier soup add 1/2 c. additional black beans and corn.  Garnish with fresh scallions or cilantro.

Bring to a boil and serve once the pasta is fully cooked.

Makes 4 12-oz portions under 100 calories!

4-oz of Tofu or a lean cooked meat or poultry of your choice.  Make sure to drain if beef or chicken is used, prior to adding the Salsa.

Add one jar of Primo and Mary’s Black Bean and Corn Salsa.

Heat and serve adding  a pinch of scallions and cheddar cheese to garnish.

Only 280 calories!
